Has quite a citric snap on the end of the experience and has a complex sweetness in the middle. Growing mostly shade-grown Arabica coffee, 35% of Mexico’s java is grown at 9oo m.a.s.l., a cooler climate that favors a higher quality bean. AFTER TASTE -The location of Chiapas is near the Guatemalan border. That being noted, you will taste notes of chocolate, bitters, nuts, citrus, and lemon, along with a round and lasting body. NEED TO KNOW- This high quality bean is best roasted medium to secure all the flavors of a great cup experience. SOAPBOX- Love pairing this coffee with a lemon tart with heavy cream or if a late riser and brunch is your thing, couple it with a western omelette and/or French Toast with candied apples.
